That was kinda my point... not having a go at huge by any means, but there's some fucking good Italian out there if you that's what you're after.
yer but it often not that hard to replicate.

italian is very easy to do well.

difference is quite often quality of produce.

I always struggle with Italian however I have to agree with Nat that Porcinos is dope.

All the herbs and a lot of the fruit & vege in their dishes are from their Nonnas garden.

Gordon Ramseys chilli con carne:

Ingredients

* 1 large onion or 2 banana shallots, chopped
* 2 cloves garlic, finely chopped
* 1 red chilli deseeded or keep half with seeds if you like it spicy
* 2 sprigs of thyme, leaves picked and roughly chopped
* Olive oil, for frying
* 500g good quality beef mince
* 1 tsp ground cumin
* 2 tsp sweet paprika
* 1 tsp dried oregano
* 3 fresh tomatoes or 1 beef tomato, roughly chopped
* 400g chopped tomatoes
, 3 tbsp tomato puree, 2 tbsp tomato puree
* 100-200ml chicken or beef stock
* 1 cinnamon stick
* 1 bay leaf
* 400g kidney beans, drained and rinsed
* Salt and pepper
* Handful of chives, chopped
* 200ml soured cream
* Boiled rice, to serve


Method: How to make Gordon's chilli con carne

1. Sweat the onion, garlic, chilli and thyme in 2 tablespoons oil in a large saucepan. At the same time, brown the mince in a separate pan over moderate heat in a little oil.

2. Add the dried spices to the onion mixture and cook until they release their aroma. Then stir in the beef and mix well. Add the fresh and tinned tomatoes and leave to cook down a little for about 5 minutes.

3. Pour in the chicken or beef stock and stir in tomato puree to taste. Drop the cinnamon and bay leaf in then bring to the boil and leave to simmer.

4. Once the sauce is beginning to thicken add the kidney beans and leave to cook for another 5-10 minutes to allow the beans to soak up the flavours. Check for seasoning.

5. Mix the chives and soured cream together. To serve, spoon the chilli into the centre of a mound of rice, with the soured cream and chives in a separate bowl on the side.

Hey guys...not sure how this works but if its food in general not just home-cooked I'll just mention I went to Babka (probably a hotspot for lots of you who near Fitzroy like me) for lunch (Brunswick St).

Chickpea/eggplant shepherd's pie in a bowl, good stuff

Not too mention their Chai, get like 3 cups worth piping hot with separate frothed milk + honey

I had a quality food experience today. I went to the Press Club for their Masa Mezedes lunch. It was probably the most expensive lunch I have ever had ($55 + coffee & wine), but also one of the best.

There was more food than I could handle, and so much of it was lovely. All dishes were to share and they just brought tmore to the table as we worked out way through them. It included soup, antipasti, seafood dishes (not too keen on the soft shelled prawns), a baked pasta dish and excellent lemon potatoes, rotisserie chicken on bed of skordalia, then the desserts! They were thoughtfully presented in a cardboard box, which is now in my kitchen. I am STILL to full to eat any dinner or my baklava.

Great lunch, but definately one to have with lots of friends. I think we may have had big portions because their was only two of us. Not sure, in case, great service and food. I'll have to try dinner there :D

babka is awesome. good borscht, mad bread, crap coffee unfortunately becoz it would be a fave for brekky otherwise

got taken to st ali yest- food was ordinary tbh. gingerlee and rays both shit on their middle eastern menu execution. really good coffee though and nice vibe. would go back but only for coffee

press club sounds the goods PC- have heard the bar menu there has a mental spana, yet to hit

Babka is great but way too busy. I stopped going there years ago for that reason.

Breakfast should be chilled and relaxed.. it should set u in good steed for the day. Nothing worse than feeling like an unloved chicken in a coup ..and haivng to pay for that privilege first thing in the morning :(

Home cooked breakfasts are the best :D

Went to a Turkish restaurant last night with my folks called Guzel Istanbul, in Mentone. The place looks a bit tacky but god the food was so good and cheap too. Yum will def try again.

Whilst a home cooked brekkie is nice... I'd much prefer someone else to prepare, cook and clean for me. Makes it a bit more special when home cooked is the norm I guess.

'Breakfast & Beer' in Daylesford... BEST scrambled eggs & bacon.... EVER. And only $10.

Yellow, soft eggs with chives sprinkled on top and cracked black pepper. Brisy but not dried out tasty bacon, all on top of nice fresh local toast.

Eating that in front of an open wood fire, good coffee in hand - great way to start the day.

Coffee was OK...I haven't had a really good sit-down coffee for ages though they're never hot enough temperature-wise, or strong enough (even when I ask for a STRONG latte). Any suggestions?

Other faves = Birdman Eating (baked eggs so good) on Gertrude and Cavellero on Smith

Atomica and St Ali have the best, most consistant coffee IMO. I go to each of these places weekly and have never been let down.

I guess it's all horses for courses and what have you, but I find the majority of cafes/restaurants I visit serve the coffee too hot. Shit's all burnt and bitter tasting.

And if you're ordering a latte, I thought it was meant to be served hot - not boiling. I.e. ready to drink immediately.

Where is St Ali?

Rosamond and Issi and Sweet Source (although last time I went there the dude failed it) are my favorite coffee places.

Atomica always good especially if Thomas is on the machine.

cooking your own breakie is the best... but, I like cooking and especially cooking for others. Then I can do thing just the way I like them :)

I love going out for breakie though too... too friggin cold at the moment but. best in spring/autumn, outside in the sun.

on the subject of cooking.... last night I made..

ribbon pasta with pumpkin in a balsamic reduction.. with pinenuts, HEAPS of basil pesto, bocconcini and marinated kalamata olives, drizzled with olive oil and finished with freshly shaved parmasan...

could have done with more olive oil tbh.. but was WIN none the less :)

A minor place can be excellent. but im not fond of the particualr jaspers blend at La Paloma, a bit to bitter in character IMO. at least the half dozen or so times ive been there

Curried sweet potato soup

Chef: Jill Dupleix Source: The Sydney Morning Herald Tuesday June 1, 2004 Modern, 45 mins plus, Contemporary, Healthy, Vegetarian, Wheat free, Dairy free, Nut free, Egg free, Soup

Orange-fleshed sweet potatoes have so much flavour that you can make this soup with boiling water rather than stock.

• 1kg orange-fleshed sweet potato
• 1.2 litres boiling water, or half water, half stock
• Sea salt and pepper
• 400g canned white beans
• 1 tsp good curry powder
• 2 tbsp parsley or coriander leaves

Method
Peel the sweet potatoes and cut into small cubes. Add the boiling water or stock, sea salt and pepper and bring to the boil. Simmer for 15 minutes or until sweet potato is soft.
Drain the beans and rinse. Add the curry powder and half the beans, stirring well, then whiz in a food processor (or with a hand-held blender) in batches, being careful not to overfill the bowl.
Return to the pan, add the remaining whole beans and gently heat.
If too thick, add extra boiling water. Taste for salt, pepper and curry powder, then scatter with parsley or coriander.

Serves 4.
Flavour hit
You can strengthen the flavour of home-made soups by soaking 50g dried mushrooms (for example, Italian porcini, French cepes) in 200mL boiling water. Leave to cool, then pick out the mushrooms and add to the soup. Strain the liquid and use it to add even more flavour.

i am making rabbit hind legs, stuffed with chicken & pork mince and prunes, wrapped in prosciutto with an Armagnac sauce for my mums 50th this weekend.

need to do a desert as well but cannot think of nything yet, was thinking jaffa soufflés but need to buy thingos to cook em in

havnt had a big cook off in ages, they always good fun
